The traffic being monitored by sFlow depends on your hardware; on the
Foundry devices that I use, sample data is collected from inbound
traffic. I think you should find this information on the datasheet of
your device.
I run sFlow v2, but there is no official documentation about it. Some
months ago I asked a similar question on this mailing-list, and I was
answered that version 2 and 4 are very similar. I was also suggested to
look directly into the source code of the collector to understand its
behaviour... it has been a bit boring, but indeed very useful! :-)
